A stretched rubber band is a great source of elastic potential energy because when it's released, the energy is converted to kinetic energy. The energy emitted from the rubber band snapping back into its shape is enough to power a small car to run.

You could get a simple lego car and put the rubber band and positioned it where your kid could pull it back to make it run.
